Is there a way to edit/add custom fields in the address book for Thunderbird 102? Granted it does have some easier customization that Outlook, but I still don't see a way to either change a field name or add a custom one.

Currently there isn't. However, there is a plan to add back those custom fields for TB102. When that will actually happen, I don't know.
