Why does my text change from courier to variable width after typing a few words

When sending an Email, after typing a few words or a line, the text changes from "Courier" to "Variable width" which is much bolder. I then have to highlight the whole lot and choose courier otherwise it looks as though I am "shouting"

I cant explain why it reverts but you can set standard in Tools/ option /display / advanced
