how do I change the default email address when emailing pictures
Windows photo gallery is my default to open & look at my pictures on my computer. When I want to email a picture (or pictures) from there, I click "email" and it opens my Thunderbird with my old email address in it instead of my new one. How do I switch the email accts

Set the preferred account as the default account.
Go to Tools|Account Settings
Select the new account.
Click the button at the bottom and select "Set as default". Note that your button may show text different to that in my screenshot.
I can't find a way to get to that tools part... I have tools for each email acct I have but not for Thunderbird in general?
You probably don't have the old-fashioned menu across the top.
Use F10 or alt+v to make it appear, then go to View|Toolbars and tick the Menu Bar checkbox.
When you can see that menu, Tools|Options will make more sense.
Other ways to get to Account Settings.
- Look under Options in the hamburger menu.
- Select the account and in the information panel that appears at the right, you should find an option to access its settings.
- Right-click an account and select Settings in the pop-up menu.
