After updating IMAP & SMTP servers, Thunderbird still searches and fails to connect to old one

My mail server has changed from lets call it 'old-server.server.com' to 'new-server.server.com'. I updated the IMAP and SMTP server information. At the bottom of the screen I get the message connecting to new-server.server.com, and then an error connection to old-server.server.com has timed out. I was expecting to get a password error, so I can update the password. When I look in saved passwords there are none there. Thunderbird has worked really well for me for many years before this - hopefully someone can help get it working again. I am on version 68.3.1

maybe have a look in the troubleshooting information on the help menu. It has details of all accounts. Perhaps you have more than one in Thunderbird.

Thanks. I've been through troubleshooting. And I only have one email account.

I have 2 possible ideas:

1) can I create an entry in Saved Passwords? What is the syntax for IMAP and SMTP passwords? Can someone post an example?

2) A more 'nuclear option' - If I were to un-install and re-install Thunderbird, would the email folders remain and reconnect? Or does un-install also delete folders - I store emails on my computer?
