With Firefox 7, no "What's New" or "Release Notes" can be found anywhere in the app or on the web site! I just updated my software to version 7, but I can't find out why I should have done it, or what has changed.

That's still no reason not to have release notes.
I gave the links in my post above to the release notes.
iirc Mozilla Firefox is trying to make release notes etc less obtrusive, but I do not think that should have stopped you seeing the Firefox & release notes.

Bug 685727 - Remove What's New page from the Firefox Update Experience.
Including comments
Because of all the recent upgrade concerns from our users and the recent chem spills, we'd like to remove the WN page from the update process for users on 4+ moving up to 7.
Instead, we would like for them to just see their normal start page.
This will only last until Fx 8 and we'll make decisions going forward from release to release.
Obviously they are still struggling to deal with the ramifications of the new, six week, rapid release cycle.
