Think I just installed the wrong Mail Merge version in my Thunderbird version 78.14.0. Instead of "mail_merge-8.1.0-tb.xpi" apparently I should have installed mail_merge-7.4.0-tb.xpi.

How do I uninstall the wrong version?

See: https://addons.thunderbird.net/en-US/thunderbird/addon/mail-merge/versions/?page=1#version-7.4.0

Problem is keep I keep getting an error message: Invalid Recipient Address No recipients were specified. Please enter a recipient or newsgroup in the addressing area.

Following instructions in this video: How to : Mail Merge with Thunderbird on Windows https://youtu.be/l8aOcsojVEo

Also watched several others and keep having the same problem. Feeling totally confused!

Thanks, Diane

Update... Found this Mozilla Support article:

Unable to uninstall add-ons (extensions or themes) https://support.mozilla.org/en-US/questions/1350027

Followed instructions, deleted the old .xpi file (mailmerge@example.net.xpi), reinstalled what i thought was the mail_merge-7.4.0-tb.xpi version, and still having the same error.

Beyond frustrated.

you simply click on the elipse (...) in the addon manager and select remove. No messing with XPI files at all.

But you should not really be messing with XPI files to install either. If you search and install from the addon manager it will select the correct version from the addon web site and install it for you, so you always get one that works, or get told there is none that works depending on the addon.
