I used Thunderbird to copy emails from my old gmail account, over to my new gmail account. Now that everything has been copied and I've confirmed that I have all of my emails am I able to delete thunderbird from my laptop WITHOUT wiping out everything I've just copied?

Yes.

Delete/uninstall the Thunderbird program.

If you want to remove all trace, or rescue as much disk space as possible, you can then remove the profile.
