I have Thunderbird and have to send specific contact information to people and all the software let's me do is export the entire address book.

Vcards do this well. Can your correspondents use these?

I think to be able to send them you'll need the More Functions For Address Book add-on.

If your correspondent can't use a vcard, then that same add-on will let you select one or more contacts and export them as a csv file.
