I have multiple separate folders inmy thunderbird installations. How can I export all the "from" addresses from one folder, to a CSV files ?

I cannot find any add-on for Thuderbird 68...

Alternatively is there a method to export all the addresses in mails saved in a certain folder, directly into a custom generated address book ?

There is an add-on that will copy the addresses from a selection of messages to the clipboard. To copy the clipboard into a file that can be converted to a csv file might take a bit more effort, although there seem to be many online and dedicated apps for extracting addresses from a file. Copy Address has a version for TB 68 and for 91:
