How do I get back to an older version and most important, HOW DO I GET MY TOOLBARS BACK?

Support Volunteers have nothing to do with Forced Updates. It was update as it is insecure and no longer will get updates and is hack-able now. As well terms of use are within Mozilla's prerogative. To submit suggestions for new or changed features, may I suggest: Feedback:

Sorry to hear those things are missing. They are actually there. Your Profile may have had some corruption in it and a new Profile was made.

Please look on the Desktop to see if there is a folder called OldFirefoxData. If there is your old Profile is in there. If not :

If the new profile works then you can transfer files from a previously used profile to the new profile, but be cautious not to copy corrupted files to avoid carrying over the problem. Never work with original files.

Going back : unfortunately 56.0.2 and below is no longer safe to use for every day use do to secuity issues, but 52.5.2 ESR. It will continue to get security updates until May 2018, and you can download and install it from this page:
