Cookies have many uses, for a summary of what cookies are used for see HTTP cookie - Wikipedia

It is very much a personal preference as to whether you want to delete cookies or not, the wikipedia article should help you decide. As a matter of routine I do not delete cookies, though I do block most tracking cookies.
