Is there any way to set Firefox to fill my screen without zooming every time I change pages? I have a 27" iMac, and at full resolution is 2560 x 1440. I know I can change the resolution of the display, but that cuts into the functionality of other applications.

As it is, I have to zoom in multiple times to avoid eyestrain. Thanks.

If the zoom feature usually gets you to where you want, you can set that zoom level as the default for all sites. There are a couple of add-ons designed to save your zoom settings. I haven't tried them, but here they are:
