I have both Waterfox 56.2.3 (x64 en-USA), and Firefox 60.0.1, do I need them both?

The browsers are separate programs. If you only ever use one of them, you only need one of them.

Of course, it doesn't hurt to make a backup just in case.

The browsers are separate programs. If you only ever use one of them, you only need one of them.
