Firefox keeps crashing every time I try to access the preferences control panel. I am running OSX Lion 10.7.3 and have done everything from resetting my profile, using safe mode, etc. Still happens every time.

Did you try a new profile?

Create a new profile as a test to check if your current profile is causing the problems.

See "Basic Troubleshooting: Make a new profile":

If that new profile works then you can transfer some files from the old profile to that new profile, but be careful not to copy corrupted files.

Type about:crashes in Firefox and paste here some recent IDs of crash reports. And post the list of your add-ons/plugins, please.

I found an earlier version of Firefox (8.0) from a time machine backup, and it seems to be working just fine, so I'm curious to know what has changed from 8.0 to 11.0 that is causing this crash on my system.
