When replying to an email, the sender's text doesn't wrap; it extends WAY off the page. Why?

To read the email and compose a response I have to manually enter "returns" so the paragraph appears on one page without having to scroll to the right.

Is this all senders, or just some?

Any pattern as to which email clients they are using?
